Peanut Butter Energy Balls
I set out to make my own Energy Balls when I noticed I was spending money on these delicious snacks for no reason when they are super easy to make and not to mention a lot more economical. These are perfect to snack on between meals or before a workout as they provide the perfect energy boost and are packed with nutrients!
Peanut Butter: High in protein, low carb
Oats: Antioxidant, High in fiber = full faster & good for the gut, can help lower cholesterol
Pumpkin Seeds: Antioxidant, High in Magnesium (blood pressure & sugar regulator, High in fiber)
Sunflower Seeds: High in Vitamin E (antioxidant) & Magnesium
Shredded Coconut: High in Saturated Fat (can help raise good HDL Cholesterol in the body)
Honey: Antioxidant, antibacterial
Dark Chocolate Chips: High in antioxidants, Higher dark chocolate concentration = High in flavanols which aid in heart health
Seat Salt: Essential for maintaining electrolyte balance

INGREDIENTS:
1 Cup Oats (large flakes works best)
1/2 Cup Natural Peanut Butter (no salt or sugar added)
1/4 Cup Pumpkin Seeds
1/4 Cup Sunflower Seeds
1/4 Cup Unsweetened Shredded Coconut
1/4 Cup Fresh Natural Honey
1/4 Cup Dark Chocolate Chips
1/2 TSP Sea Salt
DIRECTIONS:
- Add all of the ingredients to a bowl and knead together (works better if you use your hands) until it is all incorporated and starts sticking together
- Start forming balls that are about 1.5 inches in diameter by squeezing the mixture from one hand to the next. Makes about 14 balls.
- Can be enjoyed immediately or stored in the fridge - they will harden a bit in the fridge but this will make it easier to enjoy later
