Healthy Peanut Butter Protein Cups
I am a huge fan of anything with peanut butter and dark chocolate, but I always find store bought treats tend to be so incredibly unhealthy and filled with refined sugars, no matter what the brand is! With Halloween coming up, this is the perfect treat minus the guilt. The recipe below makes 6, however if you want to make them a little smaller you could probably get 8 out of it. Enjoy!
INGREDIENTS:
1 Cup dark chocolate chips or chunks (try to find the highest percentage of cocoa for the lowest amounts of sugar - I use 90%)
1 TBSP Coconut oil
½ Cup natural peanut butter (no salt or sugar added)
1 TBSP Chia seeds
1 TBSP Hemp hearts
2 scoops of your favourite protein powder (It will be a little stiff, but it will turn out great in the finished product)
Pinch of sea salt or pink Himalayan salt
DIRECTIONS:
- Melt chocolate and coconut oil together using a double boiler method
- Line muffin tin with 6 cupcake liners
- Pour 1 teaspoon of melted chocolate into each liner and put in freezer
- While chocolate is freezing (only needs about 5 minutes), add peanut butter, chia seeds, hemp hearts and protein powder to a food processor and puree
- Take chocolate out of freezer and divide peanut butter mixture evenly amongst the cupcake liners - flatten a little once evenly distributed in order to allow for an even chocolate top
- Distribute the rest of the melted chocolate on top of the peanut butter to cover
- Add a pinch of sea salt to the tops of each protein cup
- Freeze for another 5 minutes to enjoy immediately — they can be stored in the freezer but I bet you they won't last very long in there
