Salted Dark Chocolate Mini Egg Crackle
I always get super excited around easter time because it means all the mini eggs! The only problem is, they are filled with so much sugar that I always feel guilty eating too many in one sitting. I made this chocolate crackle recipe so that I could fill my craving for mini eggs in a healthy-ish way. You still get to eat mini eggs but the dark chocolate is the main ingredient making it more filling and leaving your chocolate craving satisfied! I am not saying these are healthy, but they are a healthier alternative to eating an entire bag of mini eggs in one sitting (which I am guilty of doing on occasion, it's all about balance right?).
INGREDIENTS:
1 Cup Dark Chocolate (I like to get unsweetened and sweeten it myself with maple syrup)
½ Cup Puffed Rice Cereal
¼ Cup Maple Syrup or Honey (skip this if you get a pre-sweetened dark chocolate)
2 TBSP Coconut Oil
¼ Cup Mini eggs, crushed (I used cookies & cream mini eggs to add a different flavour)
½ TSP Sea Salt
DIRECTIONS:
- Line a dish with parchment paper and set aside (I used an 11 x 5 inch baking dish, but since you are not baking it you can use any type of dish as long as you use parchment paper so it doesn't stick)
- Using a double boiler method or microwave, melt chocolate until smooth
- Mix in maple syrup, coconut oil and puffed rice
- Pour mixture into your lined baking dish and even out with a spatula
- Sprinkle mixture with crushed mini eggs and sea salt
- Freeze for at least 1 hour
- Let sit for a few minutes before cutting into whatever size squares you desire
